This is a traditional dry style of Gin loaded with juniper, jasmine and native citrus characters. The palate is imbued with notes of Angelica, pink rose and chamomile as well as hints of eucalypt and nutmeg. A more refined style that would be perfect for a classic Martini.
Harvested in the cool of the morning to avoid the warmer temperatures of the day. The fruit is quickly delivered to the winery for chilling and crushing prior to a regular fermentation in stainless steel tank. Natural bubbles are achieved by secondary fermentation in Charmat tanks (high pressured stainless steel).
Grown in the Awatere Valley of Marlborough the grapes were harvested early in maturation to ensure a moderate alcohol. The juice was separated from the skins quickly to maintain a focused vibrancy. Fermented at cool temperatures to ensure a freshness and zesty style. Pale straw colour, citrus lemon, green apple and some grapefruit aromas. The palate is flinty and textured in style with a fleshy mouthfeel. Easy drinking and very enjoyable.
